It is pronounced Keen-wah and a friend told us about it. It is an ancient whole grain and considered one of the best sources of protein in the vegetable kingdom. It is simple to prepare as rice and can be used as a delicious side dish, pilaf, or stuffing. The flavor is light and slightly nutty. It can be cooked in water or a broth.
